Recep Usta (Recep Budak) was born in 1961 in Diyarbakir. He started his restaurant profession initially by working in the scullery of a restaurant in Silvan district.    He firstly took a step to cookery when he opened his own restaurant in 1975. His mastership in cookery began by stewed jowl.    The restaurant mentioned in the line of a poem : "I loved the possibility of eating stewed meat with you in Veysel Karani’ was the first restaurant of Recep Usta in Veysel Karani.

After completing his military service in Harbiye Officier’s Club in İstanbul as a cook, in 1983 he started the pancooking  in his own restaurant.   He is the number one person who has  introduced and delivers upon request pan-cooked meat,

There are very few people who visit Diyarbakir and doesn’t eat at Recep Usta.  Upon this high demand he decided to open different branches in different cities and he opened his first branch in Ankara.

   On 18 February 2002, Recep Usta's first branch was opened on Resit Galip Street with the partnership with Haci Ihsan Aydin, whose main profession is architecture.   Studies are being made to to present Recep Usta’s tasty dishes to other cities of Turkey.

  Recep Usta's aim is to contribute to the culture of Turkish kitchen. Serving different tastes with much lower prices shows that Recep Usta's main aim is not only to earn more but to introduce, not only to Turkey but to the whole world, the regional food of Diyarbakır , such as: Pan Cooked meat, Stuffed Ribs, Stuffed Turkey, Stewed Jowl, Mumbar (stuffed lamb intestine), Lüle Kebab, Skewered Ribs and Mashed tomato salad.
